Lemon Parmesan Dressing

Lemon Parmesan dressing is a simple salad dressing with the fresh flavor of lemon juice and zest, and a hearty body of Parmigiano Reggiano® cheese. Use very finely grated Parmigiano Reggiano in this recipe, as it will dissolve better in the sauce. This lemon Parmesan dressing is best made with a blender, but you could also use an immersion blender, or a whisk.

Lemon Parmesan Dressing

Lemon Parmesan dressing is a simple salad dressing with the fresh flavor of lemon juice and zest, and a hearty body of Parmigiano Reggiano® cheese. Use very finely grated Parmigiano Reggiano in this recipe, as it will dissolve better in the sauce. This lemon Parmesan dressing is best made with a blender, but you could also use an immersion blender, or a whisk.

Ingredients (1/2 cup)
1 Lemon
6 tbsp. Olive Oil
1/3 cup Parmigiano Reggiano (grated)
1/2 tsp. Salt
1/4 tsp. Pepper
1 cup Basil Leaves (fresh, packed)
Directions
  1. For a variation on lemon Parmesan dressing, add fresh basil leaves to the mixture in your blender. You will be rewarded with a beautiful light green fresh tasting dressing that in our kitchen is referred to as “Italian Goddess” dressing. With or without the basil, this lemon Parmesan dressing is wonderful on green salads, this summer’s grilled vegetables, any pasta salad, and on small new potatoes for an Italian take on potato salad. Wash the lemon (if possible, use an organic lemon for this recipe). With a zester, remove the peel without the white pith. Juice the lemon, then add the juice and zest to your bowl or blender
  2. To the juice and zest, add the olive oil, seasonings and Parmigiano Reggiano. Blend the dressing until smooth.
  3. For Italian Goddess dressing, add the basil with the other ingredients in the blender. If you do not have a blender, chop the basil very fine before adding it to the dressing.
