Chicken Parmesan Pizza

Chicken Parmesan pizza combines two all-time American favorites in one dish. It doesn’t get better than this! You can prepare the tomato sauce and pizza dough in advance and assemble this chicken parm pizza just before you are ready to bake and eat. This is a perfect way to use up leftover chicken Parmesan. For a spicy variation on chicken Parmesan pizza, sprinkle hot chili flakes over the tomato sauce before you add the chicken to the pizza. Or add a layer of pepperoni with the chicken before you sprinkle on the Mozzarella.

For a variation of chicken Parmesan pizza, thinly slice a sweet onion and put the slices on top of the Parmigiano Reggiano® cheese before baking. If your children like chicken fingers, they will love chicken Parmesan pizza!

Ingredients (1 14" pizza)
2 cups Simple Tomatoe Sauce recipe
2 Chicken Breasts (boneless, skinless, 6 ounces each)
1 Egg (large)
1 cup Breadcrumbs (unseasoned, dried)
Salt to taste
Pepper to taste
1/2 tsp. Oregano (dry)
Olive Oil for frying
1/2 Easy Pizza Dough recipe
1 cup Mozzarella (shredded)
1/2 cup Parmigiano Reggiano (grated)
Directions
  1. Preheat the oven to 500° F.
  2. Reduce the 2 cups of Simple Tomato Sauce in a sauce pan over medium heat until the sauce has reduced to a cup and a half.
  3. Flatten the chicken breasts with a meat pounder between two sheets of plastic wrap. Season the flattened breasts with salt and pepper. Cut the flattened breasts in strips 1½ to 2 inches wide.
  4. Put the flour, eggs and breadcrumbs in three shallow dishes. Season the flour with salt and pepper and add a heaped teaspoon of dried oregano. Beat the eggs until well mixed.
  5. Dip each chicken piece in the flour, then in the egg, then in the breadcrumbs.
  6. Pour a thin layer of olive oil in a frying pan and heat over medium heat. Fry the chicken pieces until golden brown on both sides. Drain on paper towels to remove excess oil. The chicken will finish cooking on the pizza.
  7. Pat out the pizza dough on a pizza pan and spread the tomato sauce over the dough. Distribute the chicken pieces in a circle over the tomato sauce in a starburst pattern.
  8. Sprinkle the Mozzarella all over the chicken on the pizza and add the Parmigiano Reggiano.
  9. Bake the pizza for 10 to 15 minutes until the crust is golden and the cheese is bubbling. Serve immediately.
