Cheesy Breadsticks

You can used store-bought dough for these cheesy breadsticks, or make our Easy Pizza Dough recipe in your food processor before going to work in the morning, and pull it out of your refrigerator when you get home. The filling for these Italian breadsticks is also made in your food processor: simply grind up equal amounts of pepperoni and Parmigiano Reggiano® cheese. You can add Mozzarella to make these cheese breadsticks even cheesier, or add another type of salami instead of the pepperoni. Just make sure you have enough cheesy breadsticks to go around because they quickly disappear in the mouths of hungry family members.

Use these cheesy breadsticks as an after-school snack, serve them with soups or stews, or make them part of your appetizer tray. For savory cheesy rolls, roll up the pepperoni and Parmigiano Reggiano-filled dough strips as if you were making cinnamon buns instead of twisting them into breadsticks

Ingredients (6 people)
1 Easy Pizza Dough recipe
6 oz. Pepperoni slices
8 oz. Parmigiano Reggiano (grated)
Directions
  1. Roll out the pizza dough into a thin (1/4-inch thick) rectangle. Grind the pepperoni in your food processor into coarse crumbs. Alternatively, you can very finely chop the pepperoni. Mix into the grated Parmigiano Reggiano.
  2. Spread the Parmigiano Reggiano pepperoni mixture over half of the dough rectangle. Fold the other half over so you have a cheese and pepperoni-filled “file folder”. With a rolling pin, roll out your dough again to almost its original size.
  3. Heat the oven to 425° F. Cut the dough into strips. Have a greased baking sheet ready and put the strips on the baking sheet after twisting them once or twice. Once all the dough is used, sprinkle with additional Parmigiano Reggiano and bake in the preheated oven for about 15 minutes until golden and crisp. Serve immediately, but don’t burn your fingers!
