Parmesan Twists

Parmesan Twists are puff pastry cheese straws on steroids! Because we use two strips of puff pastry per twist, you get double the crispy edges and double the cheese per bite. And it’s the Parmigiano Reggiano® cheese in every bite that makes you and your guests keep reaching for another. Parmesan Twists are great with just the Parmigiano Reggiano cheese, but you can give the twists a different, well, twist by adding your favorite herbs or spices to the grated cheese. Try a sprinkle of cayenne or paprika or a little oregano, crushed fennel seeds, sesame seeds or finely chopped rosemary or thyme.

Ingredients (12 twists)
1/2 package Pastry Sheet (frozen)
1 Egg
1 cup Parmigiano Reggiano (grated)
Directions
  1. Defrost the sheet of puff pastry dough according to package instructions.
  2. Preheat oven to 400° F. Dust your work surface with flour, unfold puff pastry and roll out with a rolling pin until it is a 10-inch x12-inch-rectangle
  3. Beat the egg with a fork; then paint a thin layer of egg all over the surface of the dough with a pastry brush.
  4. Mix any herbs and spices you are using into the grated Parmigiano Reggiano and sprinkle the cheese evenly over the surface of the dough.With the rolling pin, roll over the cheese-covered dough so the cheese adheres well to the surface.
  5. Cut the dough, lengthwise, into thin strips, about ½-inch wide. Have your baking trays ready.
  6. Take two strips of dough, place the ends on the baking sheet and braid the two strips together into one long braid. Repeat with the rest of the strips. You should have braids that are at least 12 inches long. Chill the braids until you are ready to bake them.
  7. Bake the Parmesan Twists in preheated oven for 10 to 15 minutes until golden brown and crisp.Let cool and serve or store in an airtight container.
