Garlic Parmesan Breadsticks

These garlic Parmesan breadsticks take a little time to make but they’re far from difficult. Ingredients (8 breadsticks)
1 tbsp. Sugar
1 tbsp. Olive Oil
1/2 cup Water (lukewarm)
1/4 tsp. Salt
3/4 cup Rice Flour (not sweet rice flour)
11 oz. French Bread Dough (packaged refrigerated)
1 cup Parmigiano Reggiano (grated)
1 tsp. Garlic Powder
Directions
  1. Prepare the topping first: In a bowl, mix the yeast, sugar, olive oil and water. Stir with a whisk to dissolve the yeast. Add the salt and rice flour and mix into a thick paste. Set aside in a warm place for 15 minutes. It will be bubbly.
  2. Roll out the dough with a rolling pin to ¾-inch thickness.
  3. Mix the cheese with 1 teaspoon of garlic powder and any other flavoring you may be adding (dried herb, fennel seeds, poppy seeds, etc.) and spread the mix on a plate big enough for rolling the breadsticks.
  4. Cut the dough into 8 equal strips. This is best done with a pizza cutter. Prepare a baking sheet with greaseproof paper or nonstick aluminum foil.
  5. Using a pastry brush, brush a layer of the rice flour batter over the surface of the breadstick, then roll the breadstick in the Parmigiano Reggiano mixture to evenly coat all over. Put on the baking sheet and repeat with the other breadsticks. Let stand for about 15 minutes.
  6. Preheat the oven to 425° F. Place the baking sheet on an upper rack in the oven, then lower the temperature to 375° F and bake for about 15 minutes, turning the baking sheet around once if your oven bakes unevenly. The breadsticks should be golden brown.
  7. Peel the breadsticks off the baking sheet immediately. They may stick a little due to the cheese that has melted on the bottom. Eat as soon as you can hold them without burning your fingers!
